Welcome to our online cookbook for people with or without diabetes. We have almost 300 delicious and healthy recipes from around the world, approved for people with diabetes.

We welcome any new recipes that you, our readers, would like to share. We have a professional dietician who will evaluate all submitted recipes and if found to be suitable your recipe will be included on the web site

The nutritional content of each of the recipes are included which can help you make the healthier choice when cooking, and the carbohydrate content is included for those of you counting carbohydrate as part of your diabetes management.

Remember the items in the baking and desserts sections are foods that may be high in carbohydrate or fat and therefore high in calories. If you are watching your weight these foods should be used in moderation!

Christmas cinnamon shortbread stars

250g plain white flour
175g butter
grated rind 1 orange
2 teaspoons ground cinnamon
75g caster sugar
To serve: 2 teaspoons icing sugar and 1/2 teaspoon ground cinnamon

Instructions
1. Place the flour and butter into a bowl and rub together until the mixture resembles fine breadcrumbs. Stir in the remaining ingredients with 2 teaspoons cold water and combine to form a ball.
2. Roll out on a lightly floured surface to a thickness of 2.5mm. Using a 2cm star cutter, cut out approximately 80 stars.
3. Place the stars on baking sheets and bake for 10-12 minutes, until golden. Mix together the icing sugar and cinnamon and dust a little over the biscuits.
